Recipe: Bhindi Masala (भिंडी मसाला)

    Ingredients:

Ingredients.

  • Okra (ladiesfinger, bhindi, भिंडी) – cross cut, or cut lengthwise, 250gm.
  • Onion – 1, cut.
  • Tomatoes – 2 to 3, diced.
  • Chili – 1, cut.
  • Garlic – 2 to 3 cloves, cut.
  • Cumin seeds – 1/2 teaspoon.
  • Cloves – 3 to 4, crushed.
  • Cardamom – 4 pods, powdered.
  • Cumin powder – 1 teaspoon.
  • Coriander powder – 1 teaspoon.
  • Garam Masala or any other masala e.g. Kitchen King Masala – 1 1/2 teaspoons.
  • Turmeric – a pinch.
  • Salt to taste.

Method:

  • In 2-3 teaspoons of vegetable oil, fry the cumin seeds till they pop.
  • Add the cardamom and cloves to this oil.
  • Add the chili and garlic and fry.
  • Add the onions and fry till they turn translucent.
  • Next, add the tomatoes and continue frying.
  • Add the turmeric, cumin powder, coriander powder and garam masala.
  • Add the okra and stir fry for a while.
  • Season with salt.
