Recipe: Lemon Rice


  • Lime – 1, cut in half.
  • Green Chili – 1, cut.
  • Mustard seeds – 1/2 teaspoon.
  • Urad dal – 1/2 teaspoon.
  • Chana dal – 1/2 teaspoon.
  • Asafoetida (हींग) – 1/2 teaspoon.
  • Cumin seeds – 1/2 teaspoon.
  • Peanuts – 3 teaspoons.
  • Rice – 2 cups.
  • Turmeric – a pinch.
  • Coriander leaves (cilantro) – a couple of sprigs, cut.




  • Pressure cook the rice in 4 cups of water.
  • Squeeze the lime halves and collect the juice.
  • In 3 teaspoons vegetable oil, fry the mustard seeds and cumin till they pop.
  • To the same oil, add asafoetida, urad dal, chana dal, peanuts and cut green chili and fry till the dals turn light brown.
  • Add this mixture to the rice with a pinch of turmeric and mix well, till the rice turns yellow.
  • Finally, add the lime juice to the rice and mix well.
  • Garnish with cut coriander leaves.
